Green Salad with Goat Cheese & Red Wine Vinaigrette


A refreshing side salad that is a lovely accompaniment for warm weather and grilled dishes.  Top with grilled chicken to make this a main course!


  • 1-2 heads of Romaine
  • 1/4 cup Goat Cheese
  • 1.5 tsp Dijon Mustard
  • 2 tsp Red Wine Vinegar
  • 1/4 tsp Kosher Salt
  • 5 tbsp EVOO
  • 5-7 Chives
  • Pepper

Here’s what I did:

Wash, dry and roughly chop the romaine.  In a serving bowl, top the romaine with goat cheese.

In a small mixing bowl, whisk together the mustard, red wine vinegar and kosher salt.  Let stand for a few minutes, so the salt can completely dissolve.  Add in the chopped chives, a little pepper and the olive oil.  Whisk together until fully combined.


Pour the vinaigrette over the salad and gently toss.  Serve immediately.
