Corn & Avocado Salad


Here is a quick salad that can be an accompaniment for almost any grill night.  The creamy avocado and mozzarella keep the salad cool despite the onion and jalapeño, which add flavor without a ton of heat. The lime leaves a lasting tang and the cilantro brings a burst of freshness to the dish.  Enjoy with spicy shrimp or chicken.


  • 1 can Corn
  • 1 Avocado
  • 1 Jalapeño
  • 4 tbsp Red Onion
  • 1/4 cup Buffalo Mozzarella
  • 1 Lime
  • 1 tbsp EVOO
  • S&P (Salt & Pepper)
  • 1 tbsp Cilantro

Here’s what I did:

Mince the jalapeño and red onion, add to a medium-sized serving bowl.  Add the can of corn (drained) and the chopped avocado.

Mix in the zest and juice of one lime as well as the EVOO and chopped cilantro.  Season with salt and pepper.

Carefully fold in the the chopped buffalo mozzarella.  Enjoy!
